1. Full Name:
Hayley Glen /The Butcher The Baker, Dundee

2. Job Role / Apprenticeship Title:
Butcher
3. What made you choose this apprenticeship path?
I’ve always had an artistic flair, and butchery has given me a unique way to express that creativity through precision, presentation, and skill. I love the craft of it — from the structure and technique involved in breaking down carcasses to the care that goes into displaying and preparing meat. Choosing this apprenticeship path allowed me to develop my creative talents in a hands-on, practical way, while working toward a highly respected qualification. I also wanted to challenge myself in a trade that’s traditionally seen as male-dominated and prove that I could thrive at the highest level.

4. What were your goals when you started the apprenticeship?
My goal was to master the craft of butchery to the highest standard possible. I wanted to develop a deep understanding of every aspect of the trade — from carcass breakdown to customer service — and to feel confident and respected in my field. I also wanted to be a strong role model for my daughter and show her what’s possible when you stay focused and committed, and also that women can thrive in any field.

5. How did you feel at the beginning of your journey?
I felt a mix of excitement and nervousness. Starting something so intensive was a bit daunting, especially knowing the high standard I was aiming for. But I was also motivated and ready to challenge myself.

6. What challenges did you face along the way?
Balancing work, training, and being a parent was definitely a challenge. The learning curve was steep at times, especially when it came to mastering technical skills and understanding the finer details of the trade. Being a woman in the industry also meant facing certain stereotypes — but I used that as fuel to push forward and excel.

7. How did your assessor support you during your apprenticeship?
My assessor Sarah was incredible. She was my cheerleader from day one — providing structure, support, and guidance every step of the way. Her belief in me never wavered, even when I doubted myself. She made the entire process feel achievable and empowering, and I genuinely wouldn’t be where I am without her encouragement and expertise.

8. Was there a moment where things really started to “click” for you?
Yes — about halfway through the training, I found myself approaching tasks with more confidence and clarity. I stopped second-guessing myself and began to trust my instincts and training. That shift in mindset was huge for me and marked a real turning point in my development.

9. What impact has completing your apprenticeship had on your career or life?
Completing my apprenticeship and then going onto achieve the Diploma of Scotland has been life-changing. It’s given me a massive sense of pride and confidence in my abilities. I now feel fully equipped to move forward in the industry and help inspire others — especially women — to pursue butchery as a career. Most of all, I feel proud that my daughter has seen me accomplish something difficult and meaningful — and knows that she can do the same in whatever path she chooses.

10. How do you feel now that you’re qualified?
Empowered, accomplished, and proud. It feels amazing to have reached this level, especially knowing how much hard work went into it. It’s proof that dedication pays off — and a reminder that women belong in every part of this industry.

11. What are your next steps or future goals?
Now that I’ve achieved the highest butchery qualification in Scotland, my next step is to continue building my skills and refining my craft even further. I’m passionate about delivering high-quality products and excellent service, and I want to keep learning and growing within the industry. I also hope to explore opportunities to share my work more widely, connect with others in the trade, and also mentor future apprentices. Whatever comes next, I want to keep pushing myself and setting a strong example for all those around me.

12. What advice would you give to someone just starting their apprenticeship?
Trust the process and believe in yourself — even on the tough days. Lean into the support around you, ask questions, and don’t be afraid to make mistakes. The journey is worth it. Your determination will carry you further than you think.
