Qualifications in Meat & Poultry Processing
GW0G22 SVQ Level 2 in Food and Drink Operations (Meat and Poultry Skills) at SCQF Level 5 - Structure

To attain the qualification candidates must complete 8 units in total. This comprises:-
- Five to 8 optional units from Group A
And
- Zero to three optional units from Group B

Examples of units found in this course are:
- Maintain workplace food safety standards in food and drink operations
- Work safely in food manufacture
- Carry out primal cutting of meat or poultry
- Maintain product quality in food and drink operations
- Produce added value meat or poultry products
- Manufacture meat products in a retail environment

GR61 23 SVQ 3 in Food and Drink Operations (Meat and Poultry Skills) at SCQF Level 6 - Structure

To attain the qualification candidates must complete 8 units in total. This comprises:-
a minimum of one of the three mandatory units:
• Monitor food safety at critical control points in manufacture
• Monitor health, safety and environmental systems in food manufacture
• Monitor and maintain product quality in food and drink operations

Candidates must take at least four units from Group B.
Candidates may take up to three units from Group A,B or C.

- Serve on a Specialist Food Retail Counter
- Control a Carcass Shackling System
- Manage Organisational Change and Improvement in Food Operations
- Monitor Food Safety at Critical Control Points in Manufacture
- Monitor and Maintain Product Quality in Food & drink Operations
- Prepare and finish cuts from Beef Forequarter
- Prepare and finish cuts from Lamb Carcasses
