Level 2 – Food Sales & Service Skills (SCQF 5)
Fishmonger Pathway

To attain the qualification, candidates must complete a total of eight units. This consists of:
• five to eight optional units from Group A and
• zero to three optional units from Group B

Examples of units in Group A in this course are:
• Maintain Workplace Food Safety Standards in Food and Drink Operations
• Work Safely in Food and Drink Operations
• Fillet Fish by Hand
• Process Fish by Machine
• Process Fish by Hand
• Grade Fish or Shellfish by Hand

Examples of units in Group B in this course are:
• Plan and Organise Your Own Work Activities in a Food and Drink Business
• Communicate in a Business Environment
• Prepare Tools and Equipment for Use in a Food and Drink Operations
• Sharpen and Maintain Cutting Tools for Use in Food and Drink Operations
• Use Knives in Food and Drink Operations
• Contribute to Continuous Improvement in Food and Drink Operations
• Clean in Place (CIP) Plant and Equipment in Food and Drink Operations

Level 3 – Food & Drink Operations (Fish & shellfish Industry Skills) – SCQF 6

To attain the qualification candidates must complete 8 units in total. This comprises:

• One mandatory unit from Group A
- Monitor Fish or Shellfish Operations
- Manage Fish & Shellfish Operations
- Provide leadership in Your Area of Responsibility of a Food & Drink Business.

• Four units from the production/processing sector specific units in Group B

• The remaining three units can be taken from Group B or C

Examples of units found in this course are:
- Carry Out Products Changeovers in Food & Drink Operations
- Carry Out Testing in Food & Drink Operations
- Contribute to Problem Diagnosis in Food & Drink Operations
- Start up Plant and Equipment in Food & Drink Operations
- Diagnose Production Problems in Food and Drink Operations
- Report on Food Safety Compliance in Food & Drink Operations
